CHEF ALVARO DE LA PUERTA

Chef Alvaro de la Puerta is an internationally experienced chef with over 13 years of expertise in luxury hospitality. Trained in Michelin-starred kitchens and mentored by acclaimed chefs, he has worked across Spain, the United Kingdom, the Cayman Islands, and Thailand, developing a distinctive culinary style that blends Mediterranean flavours with refined European techniques.

As Executive Chef of Sizzle Rooftop Restaurant at Avista Hideaway Phuket Patong – MGallery, Chef Alvaro leads one of Phuket’s premier dining destinations. His menu celebrates premium dry-aged Wagyu steaks, fresh seafood, and fire-inspired cuisine, combining Spanish heritage with French and Italian influences. Passionate about quality ingredients, creativity, and exceptional guest experiences, he continues to elevate Sizzle with innovative dishes and unforgettable dining overlooking the Andaman Sea.

Arjun Ghai

Award-Winning Mixologist Arjun Ghai brings over a decade of experience across luxury hotels and resorts worldwide. As Cluster Beverage Manager, he leads beverage strategy across four luxury hotels in Phuket, overseeing concept development, menu innovation, team training, and beverage excellence.

Arjun has collaborated with global brands including Citadelle Gin, Campari, Bacardi, Pernod Ricard, Maison Ferrand, and Flor de Caña, as well as renowned bartenders from Asia’s and the World’s 50 Best Bars. His signature cocktail, “Root to Crown,” won the Global Winner – World Cocktail Month (MGallery × Citadelle Gin), earning international recognition for its creativity and use of local ingredients. He also holds the WSET Level 3 Award in Wines with Distinction in Tasting.

Known for creating immersive beverage concepts such as Eclipse and SAPT – Seven Regions • Seven Elements • Seven Concoctions, Arjun combines storytelling, regional ingredients, and innovative mixology to deliver exceptional luxury hospitality experiences.
