There are two ways to experience it this season. World Cocktail Month runs through the rooftop every evening at sunset. The Art of Bar was one night only a collaboration between Chef Pam and Citadelle Gin that brought Michelin-recognised cooking to the cocktail hour. Below is the story of both, and a look back at the night itself.

World Cocktail Month 2026

High above Patong Beach, overlooking the Andaman Sea, Sizzle transforms sunset cocktails into an elevated culinary journey inspired by Michelin-starred Chef Pichaya “Pam” Soontornyanakij named The World’s Best Female Chef 2025. This exclusive collaboration is part of the global MGallery Collection celebration, bringing luxury mixology, gourmet cuisine and rooftop experiences together across selected destinations worldwide.

As the sun sets across the Andaman Sea, guests are invited into a sophisticated rooftop atmosphere filled with handcrafted cocktails, ocean breezes, vibrant music and panoramic sunset views. Every cocktail is designed to create a multi-sensory experience balancing flavour, aroma, texture and presentation, and transforming the traditional cocktail hour into a luxurious rooftop ritual.

Pair your cocktail with the kitchen’s own signatures premium Wagyu, fresh Andaman seafood, open-flame grilling and Mediterranean-inspired small bites before the rooftop turns to live DJs and late-night energy above one of Patong’s best sunset viewpoints.

The chef

Chef Pichaya “Pam” Soontornyanakij

Chef Pam is the acclaimed chef behind POTONG in Bangkok, a One MICHELIN Star restaurant, and the recipient of The World’s Best Female Chef 2025. Globally recognised for storytelling, emotion and flavour on the plate, her bold culinary philosophy carries just as easily into a cocktail glass as it does a tasting menu.

For World Cocktail Month, and for The Art of Bar collaboration, her influence comes through a collection of handcrafted cocktails and curated gourmet pairings sophisticated flavour combinations built exclusively for Sizzle, from refreshing botanical notes to bold tropical flavours, each crafted to complement the rooftop’s own vibrant energy.

Citadelle Gin

The Art of Bar was created in partnership with Citadelle Gin, whose craft distilling shares the same instinct for precision and balance that defines Chef Pam’s kitchen. Together, the evening explored the relationship between food, cocktails and creative gastronomy each pairing designed to highlight the balance between bold flavours, refined ingredients and the art of mixology itself.

Avista Hideaway Phuket Patong – MGallery Collection welcomed Chef Pam for an exclusive culinary and cocktail experience in Phuket, created in collaboration with Citadelle Gin. Hosted across Sizzle Rooftop Bar and Tambu Phuket, the evening brought Chef Pam, Citadelle Gin and media guests from across Thailand together for a night exploring the relationship between food, cocktails and creative gastronomy.

Chef Pam curated an exclusive selection of bar bites, pairing her distinctive culinary style and contemporary techniques with a series of carefully crafted cocktails each pairing designed to highlight the balance between bold flavours, refined ingredients and the art of mixology.

Set against the panoramic surroundings of Patong, the evening showcased Sizzle Rooftop Bar and Avista Hideaway Phuket Patong as a destination for premium dining, cocktail events and culinary collaboration in Phuket bringing together Michelin-recognised culinary talent, premium cocktails and creative hospitality for an evening where food and drink met above the rooftops of Phuket.
